The Legacy Cookbook
A Collection of African-American Recipes 

Program Description

RECIPES TELL HISTORY, PARTICULARLY FAMILY HISTORY.
"Soul food" as we know it is a distinct cuisine derived from the edible foods available to enslaved Africans spanning from Africa to the West Indies and the Americas. Still tightly bound to oral tradition, many of these recipes have unfortunately been lost over the years. If this trend continues and these recipes remain unrecorded, many more will sadly be lost.

Project LEAN, in collaboration with the Nutrition Network of San Bernardino and Riverside Counties, the Westside Story Newspaper and the Improve Business and Community Association are asking black residents to share their family recipes and their family history. Our project is threefold: to showcase our local family recipes while celebrating the culture and communicating health tips to our community.

All kinds of recipes are welcome. We encourage the submission of original, unaltered dishes. Ultimately, our cookbook chefs and dietitians may modify recipes so that current nutritional standards are reflected to the community. Maintaining the delicious flavor of your dish is our goal; it will not be
sacrificed in the process.

It is our aim to celebrate the rich history of African Americans by incorporating your family’s stories and memories into this Legacy Cookbook. We request that you submit along with your recipe the history of the recipe and how your family came to enjoy it.

We hope that as this is discussed within the family, the interest of both young and old will be sparked to continue to seek out your family roots.We hope that the Legacy Cookbook will be a valuable tool used in the pursuit of better health for the African American community. It will educate the mind with its useful health tips and tantalize the palate with familiar "soul food" recipes. People will be empowered to make better food choices and the ultimate soundness of mind and body can be enjoyed.

A large number of African-Americans are dying as a result of diet-related diseases. Simple dietary changes and an increase in physical activity could help to decrease these numbers.
